In a food processor, combine flour, sugar, and salt. Add cold butter and pulse until mixture resembles coarse crumbs.

Gradually add ice water, 1 tablespoon at a time, and pulse until dough comes together.

Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a bowl, toss the mixed fresh fruits with lemon juice and cornstarch.

On a lightly floured surface, roll out the dough into a circle about 12 inches in diameter.

Transfer the dough to the prepared baking sheet.

Arrange the fruit mixture in the center of the dough, leaving a border around the edges.

Fold the edges of the dough over the fruit, pleating as necessary.
