  1. Preheat the oven to 180°C.
  2. Roll out the pastry dough and line a tart pan with it.
  3. Prick the bottom of the dough with a fork and bake it for 15 minutes.
  4. In a bowl, mix the whipped cream, sugar, vanilla extract, and lemon zest.
  5. Spread the cream mixture evenly over the baked pastry.
  6. Arrange the assorted fruits on top of the cream.
  7. In a small bowl, beat the egg yolk and brush it over the edges of the tart.
  8. Bake the tart for another 5 minutes.
  9. Allow the tart to cool for 1 hour before serving.
