Ingredients
Instructions
-
Preheat the oven to 325°F (160°C).
-
In a saucepan, heat the heavy cream over medium heat until it starts to simmer.
-
In a separate bowl, whisk together the sugar and egg yolks until well combined.
-
Slowly pour the hot cream into the egg mixture, whisking constantly.
-
Stir in the vanilla extract.
-
Strain the mixture through a fine-mesh sieve into a pitcher or measuring cup.
-
Divide the mixture evenly among four ramekins.
-
Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
-
Bake for 30-35 minutes, or until the custards are set around the edges but still slightly jiggly in the center.
-
Remove the ramekins from the water bath and let them cool to room temperature.
-
Refrigerate for at least 2 hours, or overnight, to allow the custards to set completely.
-
Just before serving, sprinkle about 1 tablespoon of granulated sugar evenly over each custard.
-
Using a kitchen torch, caramelize the sugar until it forms a crispy, golden-brown crust.
-
Let the custards sit for a minute to allow the caramel to harden, then serve immediately.
