  2. Slice the onions into thick rings and separate the rings.
  3. In a saucepan, melt the butter over medium heat. Add the flour and cook for 1-2 minutes, stirring constantly.
  4. Gradually whisk in the milk until the mixture thickens.
  5. Remove the saucepan from heat and stir in the cheddar cheese until melted. Season with salt and black pepper.
  6. In a greased baking dish, layer half of the onions. Pour half of the cheese sauce over the onions. Repeat the layers with the remaining onions and cheese sauce.
  7. In a small bowl, combine the breadcrumbs and Parmesan cheese. Sprinkle the breadcrumb mixture over the top of the onions.
  8. Bake for 35-40 minutes, or until the onions are tender and the top is golden brown.
  9. Let it rest for 5 minutes before serving.
