Frozen Peanut Butter Reeses Cheesecake
Reese’s Peanut Butter Cups were invented by H.B. Reese, a former dairy farmer and shipping foreman for Milton S. Hershey. He started his own candy company in the 1920s.

In a medium bowl, combine chocolate cookie crumbs and melted butter. Press onto the bottom of a 9-inch springform pan.

In a large mixing bowl, beat cream cheese and powdered sugar until smooth. Add peanut butter and vanilla extract, and beat until well combined.

Fold in the whipped topping and chopped mini Reese's Peanut Butter Cups.

Pour the mixture over the crust in the springform pan.

Smooth the top with a spatula.

Cover the pan with plastic wrap and freeze for at least 4 hours or until firm.

Remove from the freezer and let it sit at room temperature for a few minutes before serving.

Garnish with additional chopped mini Reese's Peanut Butter Cups, if desired.
