  1. Heat vegetable oil in a large pan or wok over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add diced onion, carrot, and frozen peas. Stir-fry for 3-4 minutes until the vegetables are tender.
  4. Push the vegetables to one side of the pan and crack the eggs into the empty space. Scramble the eggs until cooked.
  5. Add the cooked rice to the pan and mix well with the vegetables and eggs.
  6. Pour soy sauce over the rice mixture and stir to coat evenly. Cook for an additional 2-3 minutes.
  7. Season with salt and black pepper to taste.
  8. Garnish with sliced green onions before serving.
