  1. In a food processor, combine flour, sugar, and salt. Add butter and pulse until mixture resembles coarse crumbs.
  2. In a small bowl, whisk together egg yolks and cold water. Gradually add egg mixture to the flour mixture, pulsing until dough comes together.
  3. Shape dough into a disk, cover with plastic wrap, and refrigerate for 30 minutes.
  4. Preheat oven to 375°F (190°C).
  5. On a lightly floured surface, roll out the dough into a circle large enough to fit a 9-inch tart pan. Transfer the dough to the tart pan and press it into the bottom and sides.
  6. In a large bowl, combine sliced peaches, lemon juice, cornstarch, and vanilla extract. Toss until peaches are coated.
  7. Arrange peach mixture in the tart shell.
  8. Bake for 30-35 minutes, or until crust is golden and peaches are tender.
  9. In a small saucepan, heat apricot jam over low heat until melted. Brush the melted jam over the peaches.
  10. Allow the tart to cool completely before serving.
