  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the all-purpose flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. In a small bowl, whisk together the egg yolks and vanilla extract. Gradually add the egg mixture to the flour mixture, stirring until the dough comes together.
  4. Press the dough into a tart pan, evenly covering the bottom and sides.
  5. Arrange the peach slices on top of the dough.
  6. Bake for 25-30 minutes, or until the crust is golden brown and the peaches are tender.
  7. Remove from the oven and let it cool for 1 hour.
  8. In a separate bowl, whip the heavy cream until soft peaks form.
  9. Serve the tart with a dollop of whipped cream, a sprinkle of powdered sugar, and garnish with mint leaves.
