  1. Preheat the oven to 400°F (200°C).
  2. Cut the fresh peaches into slices and toss with sugar and lemon juice. Let them sit for 15 minutes to macerate.
  3. In a mixing bowl, combine the all-purpose flour, baking powder, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Stir in the ginger.
  4. Add the whipping cream and stir until the dough comes together.
  5. Turn the dough out onto a floured surface and knead gently. Pat or roll out the dough into a 1/2-inch thickness.
  6. Use a biscuit cutter to cut out shortcakes from the dough and place them on a baking sheet.
  7. Bake for 12-15 minutes until golden brown.
  8. In the meantime, prepare the gingercream by whipping the whipping cream with powdered sugar and vanilla extract until stiff peaks form.
  9. Once the shortcakes have cooled, slice them in half horizontally.
