  1. In a food processor, combine the flour, sugar, and salt for the crust. Add the cold cubed butter and pulse until the mixture resembles coarse crumbs.
  2. In a small bowl, whisk together the egg yolks and ice water. Gradually add the egg mixture to the food processor and pulse until the dough comes together.
  3. Turn the dough out onto a lightly floured surface and shape it into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour.
  4. Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface and fit it into a tart pan. Trim any excess dough.
  5. Prick the bottom of the crust with a fork and bake for 15-20 minutes, or until golden brown. Allow it to cool completely.
  6. For the vanilla pastry cream, heat the milk in a saucepan over medium heat until it starts to simmer. In a separate bowl, whisk together the sugar, egg yolks, and cornstarch until well combined.
  7. Slowly pour the hot milk into the egg mixture, whisking constantly. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens.
  8. Remove from heat and stir in the vanilla extract. Transfer the pastry cream to a bowl and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Refrigerate until chilled.
  9. Once the tart crust and pastry cream are both cool, spread the pastry cream evenly over the crust.
  10. Arrange the fresh berries on top of the pastry cream.
