Fondant fancies are a popular treat in British afternoon tea and are known for their delicate and colorful appearance.

  1. Preheat the oven to 350°F (180°C) and grease a square baking pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then stir in the vanilla extract.
  4. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove the cake from the oven and let it cool completely.
  7. Once the cake has cooled, cut it into small squares.
  8. In a small bowl, mix the powdered sugar with a few drops of water to make a thick icing.
  9. Divide the icing into separate bowls and add food coloring to each bowl to create different colors.
  10. Dip each cake square into the icing, ensuring all sides are coated. Place on a wire rack to set.
  11. Heat the apricot jam in a small saucepan and brush it over the top of each cake square.
  12. Roll out the marzipan and cut it into small squares, slightly larger than the cake squares. Place a marzipan square on top of each cake square.
  13. Roll out the fondant icing and cut it into squares, slightly larger than the marzipan squares. Place a fondant icing square on top of each cake square.
  14. Allow the fondant fancies to set for at least 1 hour before serving.
