Floating Islands, also known as ‘Iles Flottantes’ in French, is a classic French dessert that originated in the 17th century. It is said to have been inspired by the floating icebergs in the Arctic Ocean.

In a mixing bowl, beat the egg whites until stiff peaks form. Gradually add sugar while continuing to beat until glossy.

In a saucepan, heat the milk with vanilla extract until it reaches a simmer.

Using a spoon, drop dollops of the beaten egg whites into the simmering milk. Poach for about 2 minutes on each side.

Remove the poached meringues from the milk and place them on a wire rack to drain.

Once drained, transfer the meringues to a serving dish and drizzle with caramel sauce.

Garnish with toasted almonds.

Let the floating islands rest for 30 minutes before serving.
