  1. In a mixing bowl, beat the egg whites until stiff peaks form. Gradually add sugar while continuing to beat until glossy.
  2. In a saucepan, heat the milk with vanilla extract until it reaches a simmer.
  3. Using a spoon, drop dollops of the beaten egg whites into the simmering milk. Poach for about 2 minutes on each side.
  4. Remove the poached meringues from the milk and place them on a wire rack to drain.
  5. Once drained, transfer the meringues to a serving dish and drizzle with caramel sauce.
  6. Garnish with toasted almonds.
  7. Let the floating islands rest for 30 minutes before serving.
  8. Serve chilled and enjoy!
