Flapper Pie is a classic Canadian dessert that originated in the prairie provinces during the 1920s. It gets its name from the ‘flappers,’ or young women who embraced the new fashions and freedoms of the era.

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch pie dish.
  3. Bake the crust for 10 minutes, then remove from the oven and let cool completely.
  4. In a medium saucepan, whisk together the cornstarch, sugar, and salt. Gradually whisk in the milk until smooth.
  5. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  6. In a separate bowl, whisk the egg yolks. Gradually whisk in about 1 cup of the hot milk mixture.
  7. Pour the egg mixture back into the saucepan and cook, stirring constantly, for an additional 2 minutes.
  8. Remove from heat and stir in the vanilla extract.
  9. Pour the filling into the cooled crust and smooth the top.
  10. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.
  11. Before serving, top with whipped cream and sprinkle with lemon zest.
