Brulee is a French term meaning ‘burnt’ or ‘scorched’, referring to the caramelized sugar topping.

  1. Preheat the oven to 350°F (175°C).
  2. Cut the figs and apricots into thin slices.
  3. Arrange the fruit slices and raspberries in individual ramekins.
  4. In a mixing bowl, whisk together the egg yolks and granulated sugar until well combined.
  5. In a saucepan, heat the heavy cream and vanilla extract until it begins to steam.
  6. Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly.
  7. Pour the custard mixture over the fruit in the ramekins.
  8. Sprinkle each ramekin with a tablespoon of brown sugar.
  9. Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
  10. Bake for 25-30 minutes, or until the custard is set.
  11. Remove the ramekins from the water bath and let cool for 10 minutes.
  12. Refrigerate for at least 30 minutes before serving.
  13. Just before serving, sprinkle each brulee with a thin layer of granulated sugar and caramelize with a kitchen torch or under the broiler.
  14. Serve immediately.
