  2. In a large bowl, cream together the butter and icing sugar until light and fluffy.
  3. Add the vanilla extract and mix well.
  4. Gradually add the plain flour and mix until a dough forms.
  5. Roll out the dough on a lightly floured surface to about 1/4 inch thickness.
  6. Use cookie cutters to cut out festive shapes.
  7. Place the shortbread shapes onto a baking sheet lined with parchment paper.
  8. Bake for 15-20 minutes or until the edges are lightly golden.
  9. Remove from the oven and let the shortbread cool on the baking sheet for 5 minutes.
  10. Transfer to a wire rack to cool completely.
  11. Once cooled, decorate with sprinkles.
  12. Allow the sprinkles to set before serving.
