Festive Shortbread
Shortbread is a traditional Scottish biscuit that has been enjoyed for centuries during festive celebrations.

Preheat the oven to 180°C (350°F).

In a large bowl, cream together the butter and icing sugar until light and fluffy.

Add the vanilla extract and mix well.

Gradually add the plain flour and mix until a dough forms.

Roll out the dough on a lightly floured surface to about 1/4 inch thickness.

Use cookie cutters to cut out festive shapes.

Place the shortbread shapes onto a baking sheet lined with parchment paper.

Bake for 15-20 minutes or until the edges are lightly golden.

Remove from the oven and let the shortbread cool on the baking sheet for 5 minutes.

Transfer to a wire rack to cool completely.

Once cooled, decorate with sprinkles.

Allow the sprinkles to set before serving.
