Preheat the oven to 375°F (190°C).

In a large skillet, heat olive oil over medium heat.

Add onion and garlic, and sauté until fragrant.

Add zucchini, yellow squash, and red bell pepper. Cook until vegetables are tender.

Season with salt, black pepper, and dried oregano.

Stir in cooked quinoa.

Transfer the mixture to a baking dish.

Top with cheddar cheese and Parmesan cheese.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Garnish with fresh basil leaves before serving.
