Stilton cheese is named after the village of Stilton in England, but it is no longer produced there.

Preheat the oven to 180°C (350°F).

Roll out the shortcrust pastry and line a 9-inch quiche dish.

In a frying pan, melt the butter and sauté the chopped onion until soft.

In a bowl, beat the eggs, milk, and double cream together.

Crumble the Stilton cheese and spread it evenly over the pastry base.

Pour the egg mixture over the cheese and onion.

Season with salt and black pepper.

Bake in the preheated oven for 35-40 minutes, or until the quiche is golden and set.
