Fauxtess Cupcakes
The Fauxtess Cupcakes are inspired by the famous Hostess Cupcakes, but with a homemade twist. They are a delicious treat for chocolate lovers.

Preheat the oven to 350°F (180°C) and line a cupcake pan with paper liners.

In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.

In a separate large bowl, cream together the butter and granulated sugar until light and fluffy.

Beat in the eggs, one at a time, followed by the vanilla extract.

Mix in the sour cream until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Stir in the boiling water until the batter is smooth.

Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cupcakes from the oven and let them cool in the pan for 5 minutes. Then transfer to a wire rack to cool completely.

While the cupcakes are cooling, prepare the cream filling by beating together the cream cheese, powdered sugar, and vanilla extract until smooth.

Once the cupcakes are completely cool, use a knife or cupcake corer to remove a small portion of the center from each cupcake. Fill the holes with the cream filling.

For the ganache, place the semi-sweet chocolate, heavy cream, and butter in a heatproof bowl. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and the mixture is smooth.

Dip the top of each cupcake in the ganache, allowing it to drip down the sides.

Place the cupcakes in the refrigerator for 15 minutes to set the ganache.
