Cook farro according to package instructions.

Preheat the oven to 400°F (200°C). Wrap the beets in aluminum foil and bake for 40-50 minutes until tender. Let cool, then peel and dice.

In a large bowl, combine cooked farro, diced beets, fresh herbs, diced red onion, crumbled feta cheese, and toasted walnuts.

In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper. Pour over the salad and toss to combine.
