Farmstand Stuffed Zucchini Squash
Zucchini is a summer squash that is actually a fruit, but it is commonly used as a vegetable in cooking.

Preheat the oven to 375°F (190°C).

Cut the zucchini in half lengthwise and scoop out the seeds to create a hollow space.

Heat olive oil in a pan over medium heat. Add chopped onion and minced garlic. Sauté until fragrant.

Add diced bell pepper and cook for a few minutes until softened.

Stir in chopped tomatoes and cook until the mixture thickens.

Remove from heat and add breadcrumbs, grated Parmesan cheese, chopped fresh basil, salt, and black pepper. Mix well.

Fill each zucchini half with the stuffing mixture and place them on a baking sheet.

Bake for 25-30 minutes or until the zucchini is tender and the top is golden brown.

Let it rest for 5 minutes before serving.

Garnish with additional fresh basil leaves if desired.
