  1. Preheat the oven to 425°F (220°C).
  2. In a large mixing bowl, combine the all-purpose flour, whole wheat flour, baking soda, and salt.
  3. Cut the butter into small pieces and add it to the dry ingredients. Use your fingers or a pastry cutter to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Make a well in the center of the mixture and pour in the buttermilk and honey. Stir until the dough comes together.
  5. Turn the dough out onto a lightly floured surface and knead it gently for about 1 minute. Shape the dough into a round loaf.
  6. Place the loaf on a baking sheet lined with parchment paper. Use a sharp knife to make a cross-shaped cut on the top of the loaf.
  7. Bake the bread in the preheated oven for 30-35 minutes, or until it is golden brown and sounds hollow when tapped on the bottom.
