  1. Preheat the oven to 350°F (175°C).
  2. Cut the top off the bread loaf and hollow out the center, leaving a thick shell.
  3. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrot, celery, and potato. Cook until vegetables are tender.
  4. Add vegetable broth, salt, black pepper, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Remove bay leaf and blend the soup until smooth.
  6. Stir in heavy cream and cheddar cheese until melted.
  7. Pour the soup into the hollowed-out bread loaf.
  8. Place the bread loaf on a baking sheet and bake for 20 minutes, or until the bread is toasted and the soup is bubbling.
  9. Garnish with fresh parsley and serve hot.
