In a large bowl, combine the flour and salt.

Cut the butter into small cubes and add it to the flour mixture. Use your fingers to rub the butter into the flour until the mixture resembles coarse crumbs.

In a separate bowl, beat the egg and cold water together. Gradually add the egg mixture to the flour mixture, stirring until the dough comes together.

Transfer the dough onto a lightly floured surface and knead it for a few minutes until smooth. Shape the dough into a ball, cover it with plastic wrap, and let it rest in the refrigerator for 15 minutes.

Preheat the oven to 400°F (200°C).

Roll out the dough on a floured surface to a thickness of about 1/8 inch. Use a round cutter to cut out circles of dough.

Place a spoonful of your desired filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape and press the edges together to seal.

Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with beaten egg for a golden crust.

Bake the empanadas for about 20 minutes or until they are golden brown.
