  3. Roll the mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  4. Place the baking sheet in the refrigerator and let the truffles chill for at least 2 hours.
  5. Melt the white chocolate in a microwave or double boiler.
  6. Dip each truffle into the melted chocolate, making sure to coat it completely. Use a fork to remove the truffle from the chocolate and tap off any excess.
  7. Place the coated truffles back on the baking sheet and sprinkle them with colorful sprinkles.
  8. Return the truffles to the refrigerator and let them set for another 30 minutes.
