  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium saucepan, combine the water, butter, sugar, and salt. Bring to a boil over medium heat.
  3. Remove from heat and add the flour all at once. Stir vigorously until the mixture forms a ball.
  4. Transfer the dough to a mixing bowl and let it cool for 5 minutes.
  5. Add the eggs one at a time, beating well after each addition until the dough is smooth and shiny.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 20-25 minutes or until golden brown. Remove from the oven and let cool completely.
  8. In a saucepan, whisk together the eggnog, cornstarch, sugar, and salt. Cook over medium heat until thickened.
  9. In a separate bowl, whisk the egg yolks. Slowly pour the hot eggnog mixture into the egg yolks, whisking constantly.
  10. Return the mixture to the saucepan and cook over low heat for 2 minutes, stirring constantly.
  11. Remove from heat and stir in the butter, vanilla extract, and ground nutmeg.
  12. Cut the cooled cream puffs in half horizontally. Fill the bottom halves with the eggnog filling.
  13. In a small bowl, whisk together the powdered sugar, eggnog, and ground nutmeg until smooth.
  14. Drizzle the glaze over the filled cream puffs.
  15. Place the top halves of the cream puffs on the filling and gently press to secure.
  16. Serve and enjoy!
