  1. Preheat the oven to 180°C (160°C fan) and line a 20cm round cake tin with baking parchment.
  2. Melt the dark chocolate and butter together in a heatproof bowl set over a pan of simmering water.
  3. In a separate bowl, whisk together the caster sugar and eggs until pale and fluffy.
  4. Fold in the melted chocolate mixture, followed by the flour, amaretto liqueur, and vanilla extract.
  5. Pour the batter into the prepared cake tin and bake for 25-30 minutes until just set.
  6. Remove from the oven and leave to cool completely.
  7. Once cooled, remove the cake from the tin and cut into 1cm thick slices.
  8. Line a 5-litre pudding basin with cling film, leaving an overhang.
  9. Arrange the cake slices in the bottom and up the sides of the basin, pressing down gently.
  10. Whip the double cream until soft peaks form and fold in the crushed amaretti biscuits.
  11. Spoon the cream mixture into the cake-lined basin and smooth the top.
  12. Place in the freezer for at least 3 hours or until firm.
  13. To make the meringue, whisk the egg whites in a clean bowl until soft peaks form.
  14. Gradually add the caster sugar, whisking continuously until stiff peaks form.
  15. Remove the frozen cake from the basin and peel away the cling film.
  16. Place the cake on a baking sheet and cover with the meringue, making sure to completely seal the cake.
  17. Use a blowtorch to brown the meringue or place under a hot grill for a few minutes.
  18. Serve immediately and enjoy!
