In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.

Add the egg and vanilla extract, and mix until well combined.

In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

Divide the dough in half and shape each half into a disc. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

Roll out one disc of dough on a lightly floured surface to about 1/4-inch thickness.

Use heart-shaped cookie cutters to cut out an even number of cookies.

Place half of the cookies on the prepared baking sheet and spoon a teaspoon of strawberry jam onto each one.

Top with the remaining cookies and press gently to seal the edges.
