Kabocha squash, also known as Japanese pumpkin, is a popular ingredient in both savory and sweet dishes in Japan.

  1. Preheat the oven to 180°C (350°F).
  2. Cut the kabocha squash into small pieces and remove the seeds and skin.
  3. Steam the kabocha squash until soft, then mash it with a fork.
  4. In a mixing bowl, combine the mashed kabocha squash, flour, butter, sugar, egg yolks, heavy cream, vanilla extract, ground cinnamon, ground nutmeg, and salt. Mix well until all ingredients are fully incorporated.
  5. Press the mixture into a tart pan, making sure to evenly distribute it across the bottom and sides.
  6. Bake the tart in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is set.
  7. Remove the tart from the oven and let it cool for 30 minutes.
  8. Serve the tart at room temperature and enjoy!
