Preheat the oven to 375°F (190°C).

In a pan, heat olive oil over medium heat. Add onions and garlic, and sauté until translucent.

Add mushrooms, salt, black pepper, and thyme. Cook until the mushrooms release their moisture and become tender.

Remove from heat and let it cool slightly.

Roll out the empanada dough and cut out circles using a round cutter.

Place a spoonful of the mushroom-goat cheese filling on one half of each dough circle.

Fold the dough over the filling and press the edges to seal.

Place the empanadas on a baking sheet lined with parchment paper.

Bake for 20-25 minutes, or until golden brown.
