In a mixing bowl, combine lemon zest, lemon juice, condensed milk, butter, and vanilla extract.

Gradually add graham cracker crumbs and powdered sugar, mixing until well combined.

Stir in white chocolate chips and yellow food coloring (if desired).

Cover the bowl with plastic wrap and refrigerate for at least 1 hour.

Once chilled, shape the mixture into small truffles, about 1 inch in diameter.

Roll the truffles in sprinkles or powdered sugar to coat.

Place the coated truffles on a baking sheet lined with parchment paper.

Refrigerate for another 30 minutes to allow the truffles to set.
