Crush the lemon cookies into fine crumbs.

In a mixing bowl, combine the crushed cookies, cream cheese, powdered sugar, and lemon zest. Mix until well combined.

Roll the mixture into small truffle-sized balls and place them on a baking sheet lined with parchment paper.

Place the truffles in the refrigerator for at least 1 hour to firm up.

Melt the white chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.

Dip each truffle into the melted white chocolate, coating it completely. Place the coated truffles back on the baking sheet.
