  1. Crush the lemon cookies into fine crumbs.
  2. In a mixing bowl, combine the crushed cookies, cream cheese, powdered sugar, and lemon zest. Mix until well combined.
  3. Roll the mixture into small truffle-sized balls and place them on a baking sheet lined with parchment paper.
  4. Place the truffles in the refrigerator for at least 1 hour to firm up.
  5. Melt the white chocolate in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  6. Dip each truffle into the melted white chocolate, coating it completely. Place the coated truffles back on the baking sheet.
  7. Return the truffles to the refrigerator for another 30 minutes to allow the chocolate to set.
  8. Serve and enjoy!
