Add the diced potatoes, Chinese cabbage, bay leaf, dried thyme, salt, and black pepper. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the potatoes are tender.

Remove the bay leaf and use an immersion blender to blend the soup until creamy, leaving some chunks of potatoes and cabbage for texture.
