Chop the dark chocolate into small pieces.

Heat the heavy cream in a saucepan over medium heat until it starts to simmer.

Remove the cream from heat and pour it over the chopped chocolate.

Let it sit for a minute, then stir until the chocolate is completely melted and the mixture is smooth.

Stir in the vanilla extract.

Cover the mixture and refrigerate for at least 2 hours, or until firm.

Scoop out spoonfuls of the chilled mixture and roll them into small balls.

Roll the truffles in cocoa powder to coat.
