In a large bowl, combine broccoli, cauliflower, carrots, olive oil, garlic powder, salt, and black pepper. Toss well to coat.

Transfer the vegetables to a baking dish and spread them out in an even layer.

Sprinkle cheddar cheese and parmesan cheese evenly over the vegetables.

Bake in the preheated oven for 20 minutes, or until the cheese is melted and golden brown.
