  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition.
  4. Pour half of the cream cheese mixture over the crust. Drizzle half of the dulce de leche over the cream cheese mixture. Repeat with the remaining cream cheese mixture and dulce de leche.
  5. Bake for 45-50 minutes or until the center is set.
  6. Remove from the oven and let cool in the pan for 10 minutes.
  7. Run a knife around the edges of the pan to loosen the cheesecake, then remove the sides of the pan.
  8. Let the cheesecake cool completely, then refrigerate for at least 3 hours or overnight.
  9. Before serving, whip the heavy cream until stiff peaks form. Pipe or spread the whipped cream on top of the cheesecake.
  10. Serve chilled and enjoy!
