Preheat the oven to 375°F (190°C).

In a bowl, mash the ripe bananas.

Add the dulce de leche and chopped walnuts to the mashed bananas. Mix well.

Roll out the empanada dough and cut it into circles.

Place a spoonful of the banana mixture in the center of each dough circle.

Fold the dough over the filling and seal the edges by pressing with a fork.

In a small bowl, beat the egg with a fork. Brush the empanadas with the beaten egg.

In a separate bowl, mix the granulated sugar and ground cinnamon.

Sprinkle the sugar-cinnamon mixture over the empanadas.

Place the empanadas on a baking sheet lined with parchment paper.

Bake for 15-20 minutes, or until golden brown.
