  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, and salt.
  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg, molasses, grated ginger, and crystalized ginger.
  4. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  5. Shape the dough into 1-inch balls and roll them in granulated sugar. Place the balls on the prepared baking sheets, leaving about 2 inches of space between each.
  6. Bake for 10-12 minutes, or until the cookies have spread and are slightly cracked on top.
