Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.

Crush one packet of Oreo cookies and mix with melted butter.

Press the cookie mixture into the bottom of the prepared pan.

In a large mixing bowl, beat cream cheese, sugar, vanilla extract, and eggs until well combined.

Stir in the flour and sour cream until smooth.

Chop the remaining Oreo cookies and fold them into the cheesecake batter.

Pour the batter over the cookie crust in the pan.

Bake for 55-60 minutes or until the center is set.

Turn off the oven, crack the door open, and let the cheesecake cool for 1 hour.

Melt the semi-sweet chocolate and spread it over the cooled cheesecake.

Refrigerate for at least 3 hours or overnight.

Remove the sides of the springform pan and serve chilled.
