Double-Berry Trifle Squares
Trifle is a traditional British dessert that dates back to the 16th century and is still enjoyed today.

Cut the sponge cake into squares and layer them in the bottom of a baking dish.

Sprinkle half of the strawberries and blueberries over the sponge cake.

In a separate bowl, whip the double cream until thick.

In another bowl, prepare the vanilla custard according to package instructions.

In a small saucepan, dissolve gelatine in warm water and let it cool for a few minutes.

Add the gelatine mixture to the whipped cream and fold gently.

Pour the whipped cream and gelatine mixture over the fruit layer.

Pour the prepared custard over the cream layer.

Top with the remaining strawberries and blueberries.

Sprinkle caster sugar over the top.

Let the trifle squares chill in the refrigerator for at least 1 hour.

Garnish with fresh mint leaves before serving.
