In a large bowl, combine the grated squash, flour, Parmesan cheese, egg, minced garlic, chopped parsley, salt, and black pepper.

Mix well until all ingredients are evenly combined.

Heat vegetable oil in a large skillet over medium heat.

Drop spoonfuls of the squash mixture into the hot oil and flatten with the back of a spoon.

Cook for 3-4 minutes on each side until golden brown.
