  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a saucepan, combine the pitted dates and water. Cook over medium heat until the dates are soft and the mixture thickens. Remove from heat and set aside.
  3. In a large bowl, cream together the unsalted butter and brown sugar until smooth. Stir in the flour, rolled oats, baking soda, and salt until well combined.
  4. Press half of the oat mixture into the bottom of the prepared baking dish. Spread the date mixture evenly over the oat layer. Crumble the remaining oat mixture over the top.
  5. Bake in the preheated oven for 25 minutes, or until golden brown. Allow to cool completely before cutting into bars.
  6. Serve and enjoy!
