Granola bars were originally invented as a health food in the late 19th century by Dr. James Caleb Jackson, who believed in the power of whole grains and nuts for a balanced diet.

Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.

In a large mixing bowl, combine the rolled oats, almonds, dark chocolate chips, honey, coconut oil, vanilla extract, and salt. Mix well to combine.

Transfer the mixture to the prepared baking dish and press it down firmly to create an even layer.

Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.

Remove from the oven and let it cool completely in the baking dish.

Once cooled, lift the granola bar mixture out of the dish using the edges of the parchment paper and transfer it to a cutting board.

Cut into desired bar shapes and enjoy!
