  1. Preheat the oven to 325°F (160°C).
  2. Crush the chocolate cookies into fine crumbs and mix with melted butter. Press the mixture into the bottom of a springform pan.
  3. In a mixing bowl, beat the cream cheese and granulated sugar until smooth. Add melted dark chocolate, heavy cream, and vanilla extract. Mix until well combined.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Pour the cheesecake mixture over the crust in the springform pan.
  6. Bake for 60 minutes or until the center is set.
  7. Turn off the oven and let the cheesecake cool in the oven for 1 hour.
  8. Remove from the oven and refrigerate for at least 2 hours.
  9. Prepare the ganache by heating the heavy cream until hot but not boiling. Pour over the chopped dark chocolate and let it sit for a few minutes. Stir until smooth.
  10. Pour the ganache over the chilled cheesecake.
  11. Refrigerate for another 1-2 hours or until the ganache is set.
  12. Serve chilled and enjoy!
