Cut the buttercup squash in half and remove the seeds.

Place the squash halves on a baking sheet, cut side up.

Drizzle olive oil over the squash and sprinkle with curry powder, salt, and black pepper.

Bake in the preheated oven for 40-45 minutes, or until the squash is tender.

Remove from the oven and let it rest for 5 minutes.

Scoop out the flesh of the squash and transfer to a bowl.

Add coconut milk to the bowl and mash the squash until smooth.
