  1. Preheat the oven to 350°F (175°C) and line a mini muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix together the melted butter, milk, vanilla extract, and egg.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Gently fold in the sprinkles.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cupcake poppers to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
  9. In a small bowl, whisk together the powdered sugar and milk until smooth. If desired, add a few drops of food coloring for a pop of color.
