  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mash the ripe bananas.
  3. Add the all-purpose flour, granulated sugar, shredded coconut, unsalted butter, eggs, baking powder, salt, crushed pineapple, vanilla extract, rum, and chopped walnuts. Mix well.
  4. Pour the batter into the greased loaf pan.
  5. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  6. Remove from the oven and let it cool in the pan for 10 minutes.
  7. Transfer the bread to a wire rack and let it cool completely.
  8. Slice and serve.
