Rhubarb is often referred to as the ‘pie plant’ due to its popular use in pies.

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the rhubarb, granulated sugar, flour, cornstarch, cinnamon, and salt.
  3. Roll out the pie crust and place it in a 9-inch pie dish.
  4. Pour the rhubarb mixture into the pie crust.
  5. Dot the top of the filling with butter.
  6. Roll out the remaining pie crust and cut it into strips.
  7. Create a lattice pattern on top of the pie by weaving the strips over and under each other.
  8. Brush the lattice crust with beaten egg and sprinkle with turbinado sugar.
  9. Place the pie on a baking sheet and bake for 45 minutes, or until the crust is golden brown and the filling is bubbly.
  10. Remove from the oven and let it rest for 30 minutes before serving.
