In a saucepan, heat the creme fraiche, heavy cream, sugar, and vanilla extract over medium heat until it starts to simmer.

Remove the saucepan from heat and stir in the soaked gelatin until completely dissolved.

Pour the mixture into individual serving glasses or molds and refrigerate for at least 3 hours or until set.

In a blender, puree the strawberries, lemon juice, and honey until smooth.
