  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, whisk together the egg yolks and sugar until well combined.
  3. Add the vanilla extract and heavy cream to the mixture and whisk until smooth.
  4. Divide the mixture evenly among 4 ramekins.
  5. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  6. Bake for 35-40 minutes, or until the custard is set around the edges but still slightly jiggly in the center.
  7. Remove the ramekins from the water bath and let them cool to room temperature.
  8. Refrigerate for at least 2 hours, or until chilled.
  9. Sprinkle a thin layer of granulated sugar over each custard.
  10. Use a kitchen torch to caramelize the sugar until it forms a crispy top.
  11. Let the sugar cool and harden before serving.
