In a saucepan, heat the heavy cream and 1/4 cup of granulated sugar over medium heat until it simmers.

In a mixing bowl, whisk the egg yolks and vanilla extract until well combined.

Slowly pour the hot cream mixture into the egg yolks while whisking continuously.

Strain the mixture through a fine-mesh sieve into a pouring jug.

Divide the mixture evenly among four ramekins.

Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.

Bake for 30-35 minutes or until the edges are set but the center is still slightly jiggly.

Remove the ramekins from the water bath and let them cool to room temperature.

Refrigerate for at least 2 hours or overnight.

Before serving, sprinkle 1 tablespoon of granulated sugar evenly over each custard.

Use a kitchen torch to caramelize the sugar until golden and crispy.

Let the sugar harden for a few minutes before serving.
